Lucky Cat Wines is a perpetual collaboration between Cath Willcock (IMBIBO head honcho) and our talented friends in the Australian winemaking scene. Though the winemaker may change, the brief does not: single-vineyard, quality fruit and snappy winemaking to make fresh and vibrant wines that offer excellent value. The fruit is sourced from a stunning Snow Road vineyard in the King Valley region, and the whole project started with a focus on Pinot Gris, designed to be the antithesis of the wishy-washy examples that tend to sell at this price point.
The dynamo winemakers working on this project have ensured the Lucky Cat brand has rapidly become synonymous with quality and drinkability. From the inaugural Pinot Gris release in 2016, Lucky Cat has since spread its paws, and now included are a luscious and pretty rosé, a carbo-fantastic Nouveau Shiraz, and the spicy/skinsy Amber Gris.
The aim of Lucky Cat Wines is texture and harmony, wines that are perfect with food, but with plenty of flavour to keep drinking once the plates are cleared. We use skin contact and barrel fermentation for texture and the wines never see any new wood, so they retain their high-country varietal purity. There’s minimal sulphur use across the range, minimal additions and minimal general messing around, full stop. Every year we will continue to strive to keep these wines exciting and à-la-mode, and they will always, always be value for money.

Picked with acidity and flavour front-of-mind, then pressed straight to stainless steel tank, with about 25% barrel component for texture and a little air to open everything up. Élevage was on lees for two months prior to settling and bottling in May.

Winemaking
The fruit saw just three days on skins, with lots of gusto for extraction, then was drained and pressed. Fermentation was natural with no temperature control. The wine was then matured for three months in combination of 2000L wooden casks and barriques. Unfined and unfiltered.

100% Shiraz fruit was macerated on skins for just one day and then pressed to oak for fermentation. A cool (14-18C) natural fermentation kicked off, was allowed to warm at end of ferment and moved to stainless steel to preserve freshness. Élevage on lees for two months prior to racking and bottling in May. Unfined and unfiltered

100% Whole Bunch Shiraz had five days of carbonic maceration during which the fermenter was wrapped up to retain CO2 and carbonic characters. After this is went into an open-pot fermenter for its first foot stomp when ferment was down to 9.6Be. It was pressed off when dry (seven days later) to neutral French oak hogsheads, where it remained for five months, before it was racked and settled in tank, and then bottled unfiltered.
