An experimental and fun to drink line from Ricky Evans (Two Tonne Tasmania) who has read the Tasmanian winemaking book and asked: “what else can Tassie do?” Havilah is the answer to that question. This collection allows Ricky to play with fizzy, skin-contact styles and less conventional varieties. This ever-changing range is a love letter to curiosity in the vineyard and the winery. Although explorative, these wines are never imprecise; the geometric labels are key to understanding Ricky’s measured approach to each new wine. These are wines for those who want to know what Tasmanian wine can look like beyond Pinot Noir, Chardonnay and Riesling.
